Don’t get me wrong, most days I love labouring in the kitchen making and baking all sorts. To me it’s almost therapeutic. They are moist from the sour cream and lightly spiced to give that heady aroma of gingerbread. If your into the more grown up flavour you can of course add to the spices! Blend everything together and bake for 25-30 minutes at 170C or 350F. Recipe makes 12 muffins.

  • 1/2 cup sour cream
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups almond flour
  • Sweetener equivalent to 3/4 cup sugar
  • 1 tbsp cocoa powder
  • 2 tsp baking powder
  • 2 tsp ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
