5 Tasty Keto Pancake Recipes

It’s Pancake Tuesday here in Ireland TODAY and so I thought it would be a good idea to do a blog post on pancakes! My 5 Tasty Keto Pancake Recipes are a mixture of my own recipes and some recipes from well-known keto sites 🥞🥞🥞🥞

I’ve said this before and I will say it again, I could eat pancakes for all my meals and be happy as a clam 😍😍😍😍 In saying that however, there are some HORRID keto pancake recipes and in general, for me they all involve coconut flour. Now, don’t get me wrong, coconut flour in general is great, but I find it makes very dense and dry pancakes and not the light and fluffy kind. For that reason, where possible, I suggest using as little coconut flour in pancake recipes as possible!

🥞Keto Pancake Tips & Tricks🥞

  • Let the batter sit in the fridge for a few minutes before cooking.
  • Use a good quality pan to fry the pancakes on. Sh!t buzz if your breakfast sticks to the pan!
  • Use a sweetener you actually like the taste of and doesn’t taste bitter. I use an erythritol and stevia mix called whole earth and it’s delicious, you can find it here
  • Do not overspread the pancake batter
  • Consider making multiple batches, as they freeze beautifully- Perfect for grab-and-go breakfasts or healthy meal prep!

🥞Keto Friendly Pancake Toppings🥞

  • Sugar free syrup of any kind ( I swear by Walden Farms Pancake Syrup )
  • Butter and syrup melted together
  • Strawberries and syrup melted together in the microwave
  • Raspberries/blueberries


1. Cream Cheese & Almond Pancakes

Possibly the best textured pancake of all for me is this one. Make sure to crisp up the edges slightly for that extra crunch, you can do this by frying in butter!

Keto Cream Cheese Pancakes

  • 2 large eggs
  • 1 tablespoon water
  • 2 oz cream cheese, cubed
  • 2/3 cup almond flour
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 teaspoon sweetener
  • butter and sugar-free syrup

Add all ingredients to a blender and blend. Then fry in batches until golden brown!


2. Fluffy Buttermilk Pancakes from ‘Beauty and the foodie’

The ‘buttermilk’ in this recipe is made keto by combining almond/coconut milk with apple cider vinegar. The ‘buttermilk’ helps to create a softer, fluffier crumb 😃

Keto Buttermilk Pancakes

  • 1/4 cup coconut flour
  • 1/2 cup almond flour
  • 3 eggs
  • ½ cup almond milk or coconut milk + ½ tsp apple cider vinegar mixed in separate bowl (this makes the buttermilk)
  • 1 tsp vanilla 
  • ¼ tsp baking soda
  • 2 tbsp sweetener
  • 1 tbsp melted butter
  • 1/8 tsp sea salt

In a large mixing bowl combine all the ingredients then ladle mixture onto pan and cook until golden!


3. Peanut Butter Pancakes from ‘Ruled.me’

Golden flax is such a crucial ingredient in keto baking and cooking. I add it to lots of my recipes (muffins, cakes, breads) to give it stability and texture. These pancakes are sturdy and absolutely delicious!

Peanut Butter Pancakes

  • 60mls or 1/4 cup heavy cream
  • 4 tablespoons golden flaxseed
  • 2 large eggs
  • 2 tablespoons peanut butter
  • ½ teaspoon baking powder
  • 1 tablespoon butter

In a large mixing bowl combine all the ingredients then ladle mixture onto pan and cook until golden!


4. Soft & Buttery Ricotta Pancakes

This is a recipe I tweaked from ‘InspectorGorgeous.com’. In her recipe she uses coconut flour and again I can’t stand this in my pancakes so I omitted it when I tried to make them and I found the taste perfect. Feel free to make either versions!

  • 2 Large Eggs, separated
  • 2 tsp sweetener
  • ½ cup Ricotta
  • 3 tbsp Almond Flour
  • 1 tbsp almond butter
  • 1 tsp Baking Powder
  • ½ tsp Lemon Juice
  • Oil for frying
  1. Separate your eggs with yolks in one bowl and whites in the other. Beat the egg whites until pretty stiff peaks form, then move on to bowl #2.
  2. Whip the egg yolks and sugar together until the mixture is pale yellow and smooth.
  3. Add the ricotta and continue to beat.
  4. Spoon in almond butter and whip until the mixture is smooth.
  5. Add the dry ingredients
  6. Add the lemon juice, then gently fold in the beaten egg whites.
  7. Fry in batches until golden brown!


5. Blueberry Pancakes from ‘Tasteaholics.com’

Blueberry Pancakes

  • 1/4 cup almond flour
  • 1 tsp coconut flour
  • 1/16 tsp Stevia
  • 1/4 tsp cinnamon
  • 1/4 tsp baking powder
  • 1 pinch salt
  • 1 egg
  • 1 tbsp coconut oil
  • 1 tbsp almond milk
  • 30 grams blueberries

Combine all your dry ingredients in your blender. Add in your wet ingredients and blend until combined. Fold in your blueberries and fry in batches.
