Creamy Chicken and Broccoli Casserole

You will need

  • 700g chicken breast
  • 2 tbsp garlic infused olive oil
  • 2 tbsp butter
  • salt and pepper to taste
  • 1/2 tsp tarragon
  • 200g  mushrooms sliced
  • 4 tbsp lemon juice
  • 8 ounces cream cheese
  • 1/3 cup sour cream
  • 1 cup chicken stock
  • 350g broccoli florets
  • 1/2 cup parmesan cheese

Introduction

Hello, I’m back with this gem of a recipe after a little hiatus. Ate lots of shite and feel insanely bloated from it. With an early summer wedding just around the corner NOW is the time to start slowly back on the low carb train 😧.

Having eaten a lot of carby comfort foods throughout December, I think this Creamy Chicken and Broccoli Casserole is the PERFECT dinner to start your keto journey this January. It’s a creamy, comforting casserole that’s easy to make and has that ‘carby comfort food’ hit without the carbs 😝.

Method

  1. Firstly dice the chicken into bite sized pieces.
  2. Then, cook the chicken in the butter and garlic infused olive oil.
  3. Add all the other ingredients.
  4. Cook for a further 10 minutes.
  5. Pour into 9×13 casserole dish.
  6. Sprinkle with Parmesan cheese.
  7. Bake at 350F or 175C for 20-25 minutes.
