Happy Friday guys, today’s keto dish is inspired by none other than the delectable Big Mac! Since we’re not eating the bun on keto or McDonald’s for that matter, I thought why not have my burger in another form…..Keto ‘Big Mac’ Meatballs 😵😵😵
I LOVE a good burger but for me on keto, the ‘burger’ just reminds me of what I’m missing. I’m also not the biggest fan of the instant bread baps or any of the other keto burger bap variations, so instead I have my little burgers in meatball form! This recipe makes 16 meatballs and with the sauce they come in at 1g carbs each. They are also incredibly filling 👍
The ‘Big Mac’ angle comes comes from the sauce. So the meatballs are basically stuffed with cheese and then dipped in the sauce. Serve them on a bed of lettuce with some onions and pickles and you have yourself a little party (or some keto big mac meatballs) 🙃
- Dill Pickle Relish
- Yellow Mustard
- White Wine Vinegar
- Onion Powder
- Garlic Powder
Mix everything together in a bowl and slather over the little juicy critters!
Firstly, preheat the oven to 400F or 200C.
Then in a large bowl combine ground mince onions, and salt. Mix until thoroughly combined.
Next roll the mince into 1.5 ounce balls using your hands.
Bake the meatballs for 15 minutes.
Then, while meatballs cook add all of the sauce ingredients to a bowl and stir to combine.
When the meatballs are done remove from the oven.
Cut each cheese slice into four squares and place a square on each meatball.
Place back in the cooling oven and let the cheese melt.
- Serve with some lettuce, pickle and SAUCE 😍 and you have your own little keto big mac meatball!
