Keto Breakfast Quesadilla
You will need
- 1 Easy Keto Tortilla
- 30 g or 1oz chorizo, thinly sliced
- An egg lightly beaten
- 1 slice cheese
- Red chilli flakes

Remember that Easy Keto Tortilla recipe I posted the other day? Well, the good news is that I have another use for the tortillas that is low carb and delicious….Keto Breakfast Quesadilla 😵
As with the taco fillings, you can stuff this quesadilla however you like and serve it hot for breakfast or lunch. Each tortilla that is used is 2g carbs and remember to add on the carbs if you change the ingredients!
Possible Quesadilla Fillings
- Ham & Cheese
- Bacon, scrambled eggs & cheese
- Chicken, cheese and spicy mayo
- Sausage, cheese and scrambled egg
- Scrambled egg, avocado and cheese
- Tuna, mayo and sweetcorn
- Start off by cooking the chorizo and remove from the pan once done.
- Next scramble the eggs in the pan and once cooked remove.
- Clean the pan.
- Put pan back on heat and add a know of butter. Place the tortilla in the pan and allow to heat gently.
- Add the chorizo, eggs and top with the cheese. Sprinkle over the red chilli flakes.and 2 slices of cheese on top.
- Close the quesadilla.
- Brown for 2 minutes on each side until the cheese starts to melt.
Serve hot for breakfast with some spicy mayo! 💃
Add a salad on the side and you have yourself a delicious low carb lunch!
