Keto Cappuccino Muffins

You will need

  • 96g or 1 cup Almond Flour (ground almonds)
  • 1/4 Cup Sweetener 
  • 1 tsp baking powder
  • 40 g (1.5 oz) Butter Melted
  • 40 ml unsweetened almond milk
  • 2 Large Eggs
  • Dash of Vanilla
  • 1 tbsp espresso powder ( I use Nescafe Espresso)
  • 1 tsp cocoa powder
  • Pinch of Salt

Introduction

Sometimes you don’t want scrambled eggs and bacon for breakfast and for such times, these Keto Cappuccino Muffins are perfect!

Muffins are a great breakfast/snack on the keto diet as they are portable, cheap to make and they give you that little sweet hit you crave 😀.

These little Keto Cappuccino Muffins takes 30 minutes from scratch to bake and are pretty much fool proof! Here’s to making the mornings that much more interesting ☕️.

Method

  1. Firstly, preheat your oven to 180C (355 F)
  2. Next, mix the dry ingredients together in a bowl. Crack 2 eggs into the mixture and mix until well combined.
  3. Then melt the 40g butter and mix into the almond flour and egg mixture.
  4. Add the remaining ingredients and scoop into a muffin tray lined with muffin cases.
  5. Bake for 20 mins. Let them cool and enjoy!
