You will need

  • 1 Cup or 96g Almond Flour
  • 1/4 Cup Sweetener
  • 1 tsp baking powder
  • 40 g (1.5 oz) Butter Melted
  • 40 ml unsweetened almond milk
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 50 g Dark Chocolate
  • Pinch of Cinnamon
  • Pinch of Salt

Remember the days before keto when you went to Starbucks and grabbed a Latte and a muffin for breakfast or just as a ‘quick’ snack? Yea, me neither 🤣🤣 Well, with these little muffins you can revisit your muffin and coffee for breakfast phase WITHOUT the carbs and breaking your keto diet 👍

These little Keto Chocolate Chip Muffins takes 30 minutes from scratch to bake and are pretty much fool proof! You can even mix up the ingredients if you like to make them more interesting.

Method

  1. Firstly, preheat your oven to 180C (355 F)
  2. Next, mix the dry ingredients together in a bowl. Crack 2 eggs into the mixture and mix until well combined.
  3. Then melt the 40g butter and mix into the almond flour and egg mixture.
  4. Add the remaining ingredients and scoop into a muffin tray lined with muffin cases.
  5. Bake for 20 mins. Let them cool and enjoy!
