Keto Granola Bars

You will need

  • 165g sliced almonds (1.5cups)
  • 50g desiccated coconut (.5 cup)
  • 65g pecans (.5 cup)
  • 66.5g sunflower seeds (.5 cup)
  • 60g dried unsweetened cranberries or raisins
  • 1/2 cup or 115g butter
  • 100g erythritol
  • 1/2 tsp vanilla extract
  • Pinch of salt

Paying €3 for a low-carb protein bar is not something I enjoy. Even at that, the bar is likely to have at least 10g of carbs which is pretty high for someone only eating 20g carbs a day 😠. For this exact reason I decided to try making some Keto Granola Bars. Firstly, I love regular granola bars and secondly, I am a little sick of dense protein bars and these little bars are just perfect!

They are loaded with good fibre and only a very small amount of dried cranberry which gives you that beautiful sweet and quintessential granola taste. They are a cinch to make and take only 25 minutes to bake. You could easily add in some things you like such as orange zest or some dark chocolate chips. The recipe makes 10 big bars at 3.2g of carbs each 😀

  1. Firstly, preheat the oven to 300°F or 150C  and line a square baking dish with parchment.
  2. Combine the almonds, coconut, pecans, and sunflower seeds in a food processor.
  3. Pulse the mixture until finely chopped and crumb-like, like granola.
  4. Pour the mixture into a bowl and stir in the cranberries and a pinch of salt.
  5. Next, melt the butter in a saucepan over low heat then whisk in the erythritol and vanilla extract.
  6. Then pour the mixture over the granola and stir until well combined.
  7. Lastly press the mixture into the prepared dish, compacting it as much as possible, and bake for 25 minutes.
  8. Cool the mixture in the pan completely then remove and cut into 10 bars.
  9. Drizzle with melted chocolate for a final fancy flourish!
