Salted Pecan Bites

You will need

Shortbread Crust:
  • 125g or 1 1/4 cups almond flour 
  • 1/4 cup powdered Swerve Sweetener
  • 1/2 tsp salt
  • 1/4 cup butter chilled and cut into small pieces
  • 3/4 cup sweetener
  • 1/2 cup butter (115g)
  • 1/2 tsp vanilla extract
  • Pinch salt2 tbsp sweetener
  • 3 cups pecans (roughly 375g)
  • 3 tbsp heavy cream
  • Sprinkle of sea salt

These little Salted Pecan Bites are the perfect low carb afternoon treat with a cup of coffee and are only 2g of carbs each! The taste reminds me of a slice of pecan pie covered with salted caramel  😍.

As per all my keto recipes, no fancy or weird ingredients are required (hello what even is agar agar??) and they only take about 45 minutes in total to make!

Take one with you next time your out for a coffee and you won’t feel like your missing out on coffee shop treats.

Shortbread Crust:
  1. Preheat oven to 325F or 160C and line an 9×9 inch square baking tin with parchment paper.
  2. Then in a food processor, combine almond flour, sweetener and salt. Pulse to combine. Add in butter and pulse until it resembles fin breadcrumbs.
  3. Next, press this into bottom of the baking tin.
  4. Bake it 12 to 15 minutes, until just beginning to brown on the edges. Remove and let cool.
  5. Once cooled down, sprinkle with the pecans (I like mine chopped) and then move on to the topping!
  1. So in a saucepan, combine sweetener and butter and stir until sweetener is fully dissolved. Then bring to a boil and cook without stirring until mixture darkens to toffee colour, about 5 to 7 minutes.
  2. Then, remove from the heat and stir in vanilla extract and salt. Stir in 3 tbsp of heavy cream and mix (this really helps with the toffee flavour)
  3. Pour this mixture over the pastry and pecans and bake for 15 to 20 minutes, until topping has darkened.
  4. Sprinkle with sea salt.
  5. Once cool, cut into 16 Salted Pecan Bites!
