Introduction

So, I came across this Keto Peanut Butter Cup recipe that I wanted to make and I realised it needed sugar free chocolate chips. Regular Chocolate chips are hard to get in Ireland but SUGAR FREE ones would be insane to find 😭😭 Looked on Amazon and found a bag of Lilys which are perfect to use but unfortunately they aren’t shipped to Ireland  😭. My answer was to make my own!

These Sugar Free Chocolate Chips are a doddle to make and the best part is you can make them as sweet as you like. Sometimes dark chocolate can be too dark for baking ya know 🤷 You don’t need a fancy mould or anything like that just 3 ingredients and you’re sorted!

Method

  1. Firstly, line a baking sheet with parchment paper. In a microwave-safe bowl melt the cocoa butter until just melted. Then stir in cocoa powder and sweetener. Let sit at room temp for 12 to 14 minutes. When stirred, the chocolate will keep a “ribbon” behind the spoon that holds shape when ready. If the ribbon instantly melts back in, then it’s not ready.
  2. Transfer the chocolate to a piping bag fitted with a small round tip and pipe chocolate chips onto prepared baking sheet. Refrigerate until set.
  3. Store in refrigerator until you’re ready to use them!
